Living Low Amylose Guide

The Low Amylose diet is very similar to the Atkins diet.

  • Avoid underground vegetables except onions and garlic
  • Avoid all simple sugars, maltodextrins, and corn syrup
  • Avoid wheat, rice, rye, barley, and oats
  • Avoid bananas
  • Do eat at least six (6) ounces of protien every day
  • Do eat at least three (3) servings of above ground vegetables and fruit every day

Breakfast Ideas:
  • bacon, sausage
  • eggs (scrambled, boiled, "fried" with a little butter, or in an omelet)
  • fruit (by itself or as a smoothie)
  • veggies (by itself or in an omelet. Egg and spinach omelets-yum!) 
  • cheese and yogurt
  • Larabar
  • bagels (see below)

Lunch Ideas:
  • salads (no croutons, lots of different veggies, and fruits too!, check the dressings for sugar)
  • chicken salad, tuna salad, egg salad
  • chicken, turkey, ham, etc (try a lettuce wrap in place of bread!)
  • nuts, cheese, yogurt
  • fruits and veggies
  • sandwich or pizza (see below)

Dinner Ideas:
  • varient of the lunch or breakfast ideas
  • chicken, fish, steak, hamburger, turkey burger
  • chili, soups (No carrots! or potatoes!)
  • cheese and yogurt
  • fruits and veggies
  • sandwich or pizza (see below)

Snack Ideas:
  • yogurt (top with fruit, nuts, etc)
  • nuts (cashews, peanuts, walnuts, etc)
  • veggies with dip
  • fruit (fresh or frozen)
  • GoGo Squeez (some flavors have bananas, be careful!)
  • Larabar
  • beef jerkey
  • apples & peanut butter (check for sugar)

Drink Ideas:
  • water (add a little slice lemon or orange!)
  • milk
  • unsweet tea or lemonade
  • Ocean Spray 100% Fruit & Vegetable Juice (watch out for bananas)
  • Ocean Spray Sparkling Juice
  • Juicy Juice

Looking for a bread alternative? You CAN have tapioca starch. The only company that I have found to sell breads, bagels, and pizza crust is Against The Grain Gourmet. You can find them in your frozen food section. They are a little pricier than your normal breads, but if you break it down per meal, it's not that bad. They have a store locator on their website to see who carries their products near you.

  1. Ok...what about corn? It isn't on the list, but I saw someone say no to it on a FB post. What's the verdict. I love those southwestern recipes and I thought I was being good!
